Rice Krispie Treats, Now Kickasser!

Rice Krispie Treats that are made using the recipe on the cereal box are kickass.  Rice Krispie Treats with extra butter, extra globs of marshmallows and vanilla are just kickasser.

Ingredients
  • 2 10.5 oz bags miniature marshmallows
  • 5 tbsp butter Put 1 tbsp of the butter to the side
  • 1 tsp pure vanilla extract
  • 6 cups Rice Krispies
Servings: 9x13 pan
Instructions
  1. Grease a 9x13 pan with the 1 tbsp of butter. If you don't use all of it, throw it into the bowl in the next step where you combine the marshmallows and remaining 4 tbsp of butter. You can't go wrong with more butter.
  2. Place 1 bag of marshmallows and all of the butter in a really large (but not so big that it won't fit in your microwave) glass microwave-safe bowl. Microwave on high for 45 seconds.
  3. Spray a large serving spoon with non-stick spray (this is important to avoid a sticky mess). Use this spoon to stir the marshmallow/butter mixture and return the bowl to the microwave for another 45 seconds.
  4. Remove from microwave, add vanilla to the mixture and stir until combined. Add the Rice Krispies and stir again until combined.
  5. Add 1.5 cups of marshmallows from the second bag to the mixture, stir only a little until combined (you don't want them to disappear, you just want them incorporated into the mix) and then pour the entire bowl out into the 9x13 pan.
  6. Find another large serving spoon (or wash the one you used before if you're that ambitious) and spray it with non-stick spray. Use this spoon to press the mixture firmly into the pan so they're nice and compact.
  7. Let set for 30 minutes or put the pan in the refrigerator to make them set even more. Truth be told we've never made it to the 30 minutes.
