Healthy Pancakes (Really!)

Low carb, high protein, no sugar… they’re practically perfect. They are thin almost like a crepe and a little custardy on the inside..  They also freeze really well, too.

If you are lactose-intolerant these are absolutely worth taking a Lactaid for.

Ingredients
  • 6 eggs
  • 1 1/2 cups cottage cheese
  • 1/2 tsp salt kosher or sea salt
  • 1/2 cup flour regular or gluten-free
  • 1/4 tsp baking soda
  • 1 tsp vanilla
Servings: small pancakes
Instructions
  1. Beat eggs until combined, proceed to next step. If you have a food processor (like a Ninja or other brand) throw ALL of the ingredients into it and blend until smooth. Skip to Step 4 while feeling really freaking smart. Otherwise, proceed to Step 2.
  2. With a mixer or chopper, blend the cottage cheese to remove all of the lumps so it's smooth.
  3. Add eggs and remaining ingredients to cottage cheese then stir to combine.
  4. Pour onto a hot, lightly greased skillet or griddle using a 1/4 cup measuring cup. Cook over medium heat until the edges are no longer shiny and the bubbles are breaking. Flip and cook other side until browned.
