Really moist, easy to put together and a great way to use up any bananas with more than a tiny spot of brown on them. Because everyone knows that if there is a tiny spot of brown they’re overripe and gross.
1 3/4 cups
1 1/2 cups
medium ripe bananas about 1 cup
oil canola, almond, coconut
chopped walnuts optional
buttermilk recipe below if you don't have any
In a large bowl stir together flour, sugar, baking soda and salt.
In another bowl, combine the eggs, mashed bananas, oil, buttermilk and vanilla. Add to flour mixture, stirring until just combined. Fold in nuts if you choose to use them.
Pour into a greased 9x5 loaf pan until the pan is about half full. Bake at 325F for 1 hour 15 minutes or until a toothpick inserted in the center comes out clean. Cool on wire rack.
To make buttermilk measure 1 tablespoon lemon juice or vinegar into a 1 cup measuring cup. Add enough milk to bring up to one cup. Let sit 5 minutes to thicken and sour a little.
